storage: beets with greens attached will keep in a loosely sealed plastic bag to 1-2 weeks.  If you remove the greens, you can prolong the shelf life of the roots up to a month.  Best cooking method: roasting or steaming, can also be grated raw in salads.  Beet greens can be cooked in the same fashion as chard.
